Classic Method Brut Sparkling Wine can be drunk both as an aperitif and with first and second fish dishes. The harvest takes place at the end of August and is carried out by hand in order to preserve the integrity of the grapes and therefore the final quality of the wine. The second fermentation, which create the perlage, takes place inside the bottle and lasts about a year, the Sparkling Wine then remains in contact with the yeasts for about 18 months during which it acquires aromas, softness and structure. The processing of this Sparkling Wine lasts about 3 years.
