The Charmat Method Rose Sparkling Wine can be drunk on various occasions, it is ideal as an aperitif, with fish dishes or as a wine for any occasion. The harvest takes place at the end of August and is carried out by hand. After the pressing, the must and the skins undergo a period of 6-8 hours of maceration in order to extract a small amount of color and above all enrich the future wine with special aromas and fragrances. The second fermentation takes place inside heat-conditioned steel tanks for about one month, then the Sparkling Wine stays in contact with the yeasts for about 30 days during which it acquires aromas, softness and structure.
